Cabernet Sauvignon and Merlot
Add a dash of Merlot or a dab of Shiraz; the Aussies love to blend their Cabs. Cab and Shiraz
blends started off the trend, but as Merlot has become all the rage so have Cab/Merlot blends. Australia’s full-fledge Cab boasts a more subtle character than its
California relatives, and is bigheartedly fruity.
Something that most California wineries hate to admit, most have adopted adding Merlot or
Cabernet Franc to the coveted Napa Valley Cabernet Sauvignon. The regulations do not require them to disclose it the addition of up to 15% of a varietal and not
disclose it; and most do not disclose it. Another note is that the 15% does not even have to be from Napa.
Australia is also leading the way with disclosing the fining agent used in wines. It is
required on all domestically sold wines and plans are underway to include the information on export brands.
